In a high-speed blender, combine oil and parsley; run until parsley is fully mixed with oil.
Into a large sauté pan over medium heat, pour parsley-oil mixture and cook over a simmer until bright green, 3 to 4 minutes.
Strain oil through a fine mesh sieve lined with cheesecloth and chill.
When oil is cool but not cold, place egg yolks and mustard into the mixing bowl of a stand mixer; turn up to speed 3 and slowly drizzle in parsley oil to create a mayonnaise. Season to taste with salt and pepper.
